Savory Chicken Breakfast Sausage with Greens

A nutrient-dense, low-sugar meal that is perfect for any time of day.

  • 1 lb ground chicken
  • 1 ¾ tsp garlic powder
  • 1 ¾ tsp dried sage
  • 1 ¾ tsp onion powder
  • ¾ tsp cayenne
  • 2 ½ tbsp olive oil
  • 8 cups spinach
  • 4 cups arugula
  • 1 lemon
  • ¼ cup sunflower seeds, shelled
  1. In a large bowl. combine ground chicken, garlic powder, dried sage, onion powder, cayenne and a generous pinch of salt and pepper. Mix well and shape into 8 patties.
  2. Heat a skillet over medium heat and add 1 ⅓ tbsp olive oil. Once hot, add chicken patties and press down gently to flatten. Cook undisturbed 3 to 4 minutes, until well browned, then flip and cook other side another 3 to 4 minutes, until cooked through.
  3. While sausage cooks, combine spinach and arugula in a serving dish. Drizzle with remaining 2 tbsp olive oil, 1 ⅓ tbsp lemon juice and a pinch of salt and pepper. Toss until lightly coated. Top with sunflower seeds.
  4. Serve chicken sausage with salad.
