Raspberry Sherbet Chia Pudding

About this recipe:

This chia pudding is easily made the night before for a simple breakfast.

Ingredients:
  • 8 pitted dates
  • 2 tsp vanilla
  • 2 cups milk
  • 4 cups raspberries
  • 1/2 cup chia seeds
Instructions:
  1. The night before: Place dates and vanilla extract in blender. Add milk in a slow stream with the motor running, blending until smooth.
  2. Add raspberries and continue to blend until smooth.
  3. Stir in chia seeds. Transfer mixture to a jar or bowl. Cover and refrigerate overnight.
