Quick Keto Mug Omelets

Ingredients:
  • 4 sprays cooking spray
  • ½ red onion
  • 2 oz ham
  • ½ red bell pepper
  • 1 ½ tbsp fresh chives
  • 8 eggs
  • ½ cup cream
  • 1 ⅓ cups shredded cheddar cheese
Instructions:
  1. Grease 4 large microwave-safe mug(s) or pint-sized mason jar(s) with cooking spray. Finely chop onion, ham and red bell pepper. Finely chop chives and set aside.
  2. Crack eggs directly into mug or jar and add cream, shredded cheddar, onion, ham, red bell pepper and a pinch of salt and pepper. Whisk lightly with a fork until well combined (if making multiple servings, use 2 eggs per mug and divide other ingredients evenly).
  3. Microwave on low power for 4 minutes, checking often until eggs are firm. Top with chives to serve.
