Keto Cobb Egg Salad

About this recipe:
A classic lunch option altered to fit the keto diet.
Ingredients:
- 2 tbsp mayonnaise
- ¼ cup greek yogurt
- 1 tbsp red wine vinegar
- 4 bacon strips
- 4 hard-boiled eggs
- 1 avocado
- ½ cup cherry tomatoes
- 1 ½ tbsp fresh chives
- 4 cups blue cheese
Preparing your hard-boiled eggs:
You will need to first prepare four hard-boiled eggs. Hard-boiling an egg generally takes 10 minutes to make.
Instructions:
- In a small bowl, stir together mayonnaise, greek yogurt, red wine vinegar and a pinch of salt and pepper.
- Cook bacon in a skillet or microwave until crispy. Coarsely chop hard-boiled egg, bacon and avocado. Cut cherry tomatoes into quarters. Finely chop chives. Crumble blue cheese.
- In a serving bowl, combine hard-boiled egg, bacon, avocado, cherry tomatoes, crumbled blue cheese and dressing. Stir until well coated. Top with chives to serve.
