Keto Cobb Egg Salad

A classic lunch option altered to fit the keto diet.

Ingredients:
  • 2 tbsp mayonnaise
  • ¼ cup greek yogurt
  • 1 tbsp red wine vinegar
  • 4 bacon strips
  • 4 hard-boiled eggs
  • 1 avocado
  • ½ cup cherry tomatoes
  • 1 ½ tbsp fresh chives
  • 4 cups blue cheese
Preparing your hard-boiled eggs:

You will need to first prepare four hard-boiled eggs. Hard-boiling an egg generally takes 10 minutes to make.

Instructions:
  1. In a small bowl, stir together mayonnaise, greek yogurt, red wine vinegar and a pinch of salt and pepper.
  2. Cook bacon in a skillet or microwave until crispy. Coarsely chop hard-boiled egg, bacon and avocado. Cut cherry tomatoes into quarters. Finely chop chives. Crumble blue cheese.
  3. In a serving bowl, combine hard-boiled egg, bacon, avocado, cherry tomatoes, crumbled blue cheese and dressing. Stir until well coated. Top with chives to serve.
