Keto Cinnamon Almond Cookies

Ingredients:
  • ½ cup butter
  • 2 ¼ cups almond flour
  • 1 egg
  • ½ cup stevia
  • 1 tsp vanilla
  • 1 tbsp cinnamon
  • ¼ cup sliced almonds
Instructions:
  1. Preheat oven to 350° F (177° C). Line a baking sheet with parchment. Soften butter slightly in the microwave for 5 to 10 seconds.
  2. In a bowl, combine almond flour, butter, egg, ½ cup stevia, vanilla extract, cinnamon and a pinch of salt. Mix until well combined into a dough.
  3. Roll dough into 1-inch balls and place on prepared baking sheet. Flatten each ball with a fork to create criss-cross patterns. Top each cookie with a pinch of sliced almonds and a sprinkle of stevia.
  4. Bake until edges are golden brown, 12 to 15 minutes. Let cool completely before removing from the parchment.
