Easy Chicken Fried Rice

About this recipe:

This chicken fried rice is a great alternative to ordering takeout, and is healthier too.

Ingredients:
  • 1 1/2 tbsp sesame oil
  • 4 cups pre-cooked brown rice
  • 12oz pre-cooked chicken, cut into pieces
  • 1/4 cup soy sauce
  • 1 lb frozen vegetables
  • 4 eggs
Instructions:
  1. In a large skillet over high heat, add sesame oil and heat until shimmering.
  2. Add rice, chicken, soy sauce and mixed vegetables and cook, tossing occasionally, until hot throughout, about 5 minutes.
  3. Meanwhile, in a small bowl whisk the eggs until light yellow. Slowly drizzle eggs into skillet, stirring constantly until fully cooked.
  4. Plate and enjoy! You'll also have plenty of leftovers.
