About this recipe:
This chicken fried rice is a great alternative to ordering takeout, and is healthier too.
Ingredients:
- 1 1/2 tbsp sesame oil
- 4 cups pre-cooked brown rice
- 12oz pre-cooked chicken, cut into pieces
- 1/4 cup soy sauce
- 1 lb frozen vegetables
- 4 eggs
Instructions:
- In a large skillet over high heat, add sesame oil and heat until shimmering.
- Add rice, chicken, soy sauce and mixed vegetables and cook, tossing occasionally, until hot throughout, about 5 minutes.
- Meanwhile, in a small bowl whisk the eggs until light yellow. Slowly drizzle eggs into skillet, stirring constantly until fully cooked.
- Plate and enjoy! You'll also have plenty of leftovers.
