Blueberry cheesecake smoothie

About this recipe:

A slice of blueberry cheesecake in smoothie form.

Ingredients:
  • 1 lemon
  • 3 cups frozen blueberries
  • ½ cup cream cheese
  • 2 tsp vanilla
  • 12 oz tofu (extra-firm)
  • 2 cups milk
Instructions:
  1. Zest and juice lemon. In a blender, combine frozen blueberries, 4 tsp lemon juice, 2 tsp lemon zest, cream cheese, vanilla, tofu and milk. Blend until smooth.
  2. If desired, add water 0.25 cup at a time for a thinner consistency, or add 1 cup ice cubes for slushier texture. Blend again until smooth and enjoy!
