Banana Coconut Quinoa Porridge

About this recipe:

A nutritious and tropical breakfast option that will keep you full.

Ingredients:
  • 1 ⅓ cups canned coconut milk (lite)
  • 1 ⅓ cups dry quinoa
  • 2 bananas
  • 1 cup rolled oats
  • ¾ tsp cinnamon
  • 1 tsp vanilla
Instructions:
  1. Stir coconut milk, 1 ⅓ cup water and the quinoa together in saucepan. Bring to a boil over medium-high heat. Cover, reduce heat to low and simmer 5 minutes.
  2. Meanwhile, peel and slice banana.
  3. Stir banana, rolled oats and cinnamon into the quinoa mixture. Add a pinch of salt if desired. Cook, stirring frequently, 5 to 10 minutes, or until quinoa has softened and mixture is thick.
  4. Remove from heat and stir in vanilla.
