Asian Chopped Salad

Ingredients:
  • 4 cups kale
  • 1 tsp salt
  • 1 cup shredded carrots
  • 1 cup edamame
  • 2 avocados
  • 4 green onions
  • 1/2 cup olive oil
  • 1/4 cup rice vinegar
  • 8 tsp lime juice
  • 2 tbsp soy sauce
  • 2 tbsp minced ginger
  • 1 1/2 tbsp minced garlic
Instructions:
  1. Remove stems from kale. Discard stems and finely chop leaves. Transfer kale to a large bowl. Sprinkle with salt and massage with your hands for about 2 minutes.
  2. Add carrots and edamame to the bowl.
  3. Cut avocados in half and remove pits. Scoop out each half and cut into 1/2-inch dice. Add to the bowl.
  4. Finely chop green onions and add to the bowl.
  5. In a medium bowl, whisk together oil, vinegar, lime juice, soy sauce, ginger, and garlic. Drizzle over salad and toss to combine. Enjoy!
