Asian Chopped Salad

Ingredients:
- 4 cups kale
- 1 tsp salt
- 1 cup shredded carrots
- 1 cup edamame
- 2 avocados
- 4 green onions
- 1/2 cup olive oil
- 1/4 cup rice vinegar
- 8 tsp lime juice
- 2 tbsp soy sauce
- 2 tbsp minced ginger
- 1 1/2 tbsp minced garlic
Instructions:
- Remove stems from kale. Discard stems and finely chop leaves. Transfer kale to a large bowl. Sprinkle with salt and massage with your hands for about 2 minutes.
- Add carrots and edamame to the bowl.
- Cut avocados in half and remove pits. Scoop out each half and cut into 1/2-inch dice. Add to the bowl.
- Finely chop green onions and add to the bowl.
- In a medium bowl, whisk together oil, vinegar, lime juice, soy sauce, ginger, and garlic. Drizzle over salad and toss to combine. Enjoy!
